Herb-crusted turkey breast
Crisp skin and a rosemary-sage crust. A 2–2½ lb bone-in breast serves roughly 2–4, depending on appetites and sides.
Ingredients & step-by-step method +
For 2–4: 1 completely thawed, 2–2½ lb bone-in, skin-on turkey breast; 1 tbsp olive oil; 1 tsp kosher salt; 1 tsp dried thyme; ½ tsp each dried rosemary, sage, garlic powder and smoked paprika; ¼ tsp black pepper.
- Check the breast fits the air fryer without touching the heating element. Pat it dry with clean paper towels. Do not rinse raw turkey.
- Mix seasonings. Rub lightly with oil and season the turkey, including under the skin if possible.
- Air fry at 360°F skin-side down for about 20 minutes. Carefully flip skin-side up.
- Start checking after approximately 15 minutes more. Continue in short intervals until a thermometer reads 165°F in the thickest part, without touching bone. Timings can vary considerably.
- Rest about 10 minutes, then slice. Cook additional breasts in separate batches for more guests.
